Lemon Tart My Favourite

This one is my personal favourite
Filling
6 lemons zested and juiced
1 pint double cream
9 eggs
14oz Caster Sugar
base is sweet pastry with the addition of icing sugar in place of the normal sugar .
Bake blind for ,but make sure base is cooked through
Add lemon custard mix to warm base and place back in oven at 140-150 for 40 minutes until just set no bubbles .
Serve warm with a caramelized top and raspberry sorbet or just on its own .
